Spinach Mushroom Sabzi

Spinach Mushroom SabziIngredients you’ll need:

  • Two tablespoons of oil
  • Around six cups of chopped spinach
  • Two cups of mushroom cubes
  • One teaspoon of cumin seeds
  • 2-3 cloves
  • One bayleaf
  • One tablespoon of fresh cream
  • One teaspoon of garlic paste
  • Half teaspoon of green chili paste
  • Half teaspoon of ginger paste
  • One cup of finely chopped onions
  • Half cup of finely chopped tomatoes
  • One teaspoon of chili powder
  • One teaspoon of coriander seeds (or coriander powder)
  • One teaspoon of garam masala
  • Half teaspoon of dried fenugreek leaves (also known as kasuri methi)

Instructions to make the Spinach Mushroom Sabzi:

Step 1: You start by taking a large and deep non-stick pan and add around 4-5 cups of water to it. Bring it to boil and then add in the spinach and let it cook on a medium flame for around 3-4 minutes.

Note: Make sure you don’t add too much or too little water if you want the spinach to be cooked properly and remember to stir occasionally.

Step 2: Once the spinach is ready, take it off the heat, drain and let it aside to cool completely. Once the spinach has cooled, put it in a blender and combine it into a smooth mixture. Keep in mind that water should not be added at all.

Step 3: Take another deep non-stick pan and heat some oil. Then, add in the cloves, bay leaf, ginger paste, green chili paste, garlic paste and the cumin seeds. Saute on a medium flame for some time and then start adding the onions. Let the onions cook for around 2 minutes and then start adding the tomatoes and once again, sauté for 2 minutes on medium flame.

After you add the mushroom and let them cook for 1-2 minutes on medium flame, start adding the spinach mixture, chili powder, garam masala, dried fenugreek leaves, coriander seeds, cumin seeds and salt. Mix these ingredients properly and let the mixture be cooked on a medium flame for around 2-3 minutes.

By now, the mixture must have turned into a light-green-colored mixture. Now, add some fresh cream and let it cook for one minute while stirring occasionally.

Step 4: Once the time is over, serve hot with some rice or bread.
